Barley Stew with Leeks, Mushrooms and Greens. I LOOOOVE leeks.  They are so much more beautiful and more mild than onions.  

I like this recipe because it it takes under an hour to make and it features common ingredients.  Oh, and only 230 calories per serving.  MMMM.
